When I create a collection is shows on the public storefront, but as soon as I edit it - to add a header image or change any tags, it no longer shows in the public storefront - even after 3 days.

Probably a slow server/slow indexing issue. We should be allowed to use a cattle prod on it. That would get it mooooving. :cow:
