Over the years I know of two items that have been an Editor’s Pick. How do you know when one of your items has been chosen for Editor’s Pick? How do you get an item picked?

That is what I am wondering as well.
I used to only find out by accident, but more recently I think I’ve received a couple of emails letting me know that an item was an editors pick.
You can enter your storesname+gift in the market place search. Then you can filter the search with +filter. Tick the Special Picks box. Then a new filter will appear next to Price called Special Picks. Select that and if you have an Editor’s Pick you should see an option to tick that box.
Note that if you do not have any “Special Picks” you will not see the option to tick the box under +Filters.

For what it’s worth, you don’t have to use +gift at then end. Just use your store name as it appears in your url.
