I’ve clicked to view, and even shared products that I’ve been told need optimizing, however they’re still stuck with the red triangle and still on the ‘needs to be optimized’ list? Is there an issue with them at the moment?
I’ve been getting the same result.
Are they actually Hidden? For products that have been hidden for optimization, just viewing and/or editing the meta data isn’t enough, you have to manually check to box to make them public again.

It’s happening even after viewing the product, modifying the title/tags, and unchecking the “hidden” box.

No, they’re not hidden, just have the red triangle still showing. Another interesting thing I haven’t seen before is that the share button on the same page under the thumbnails of these products has disappeared. It’s still there on the actual product page though. In the past when I’ve had to optimise stuff all I needed to do was unhide them and click to view. Admittedly I have just come back from taking a year off, so things might have changed??
