Just noticed the “Publish Method” in the stats area in the back end of my store. We have the option to sort by how we published our product - any, individually or by quick product create. Is this a new feature?

That was definitely not there before. It’s new.

It seems interesting that it would be added after Quick Create has been removed as an option.

Will quick create make a come back? I’ve never used it here but did on Society6 (which I no longer use). Zazzle might make a clear separation between products created manually one by one or with some new? quick create option.
It does make it easier for example to apply patterns to many products in a short period but IMO could also lead to 1000’s of lower quality products or even spam. With the same design thrown on as many products as possible, without making sure it looks good, works or with personalization options.

I’m thinking it’s there to help us easily get rid of our old quick create products/designs. At least that’s what I’ll be using it for. 😁

Good way of using it 
we’ll see if there’s an announcement for this option or if it’s just a minor feature update.
