If I add a cover photo to a product after the fact, do I need to then go to “edit details” in the backend and change merchandising options to make the cover photo the default or will this happen automatically?/

It should happen automatically but it’s always best to double check it’s ‘taken’ as it can take 24-72 hrs to become the merchandising image.
You can edit details on the product page too
Don’t expect miracles and a quick update of the cover image- patience is your friend
