I am trying to think of good product examples now, but simply where you design doesn't fully fit nicely on a certain size of the product, do you make one for each size, or is there a normal/best selling size.
Take an enclosure card, you might have a full cover background that fits nicely on 3.5 x 2, but not on a larger size or a square one might through everything out. Would you make one for each size or leave that to the customer. Was thinking if too many of the same design/product is a bad thing on your store.

Before answering your question, I looked at an array of your products so I wouldn't give information for products you don't often make, and I'm glad I did because I can see your emphasis is mainly on various types of stationery. The best thing you can do when creating your images is to make sure they're large enough to fit what's normally the largest product you're likely to design. That way, the image will expand to fit. This is doubly true when you're creating a background. Square shapes can be a true pain in the neck. I avoid them when possible, but for me, it's in the realm of posters. I don't know what format you're using for your designs, but just in case, try to use PNGs with transparency when possible.
I don't know how others do it, but I often leave it up to the customer to change shape and size because they can see the difference immediately. If they want something that we don't think is suitable, we can't control it. Personally, I wouldn't try to make a separate product for each shape and size.
