I am considering starting a third store. There are two collections from my first store that i would like to move to the third new store. I have not found a way how to do that. Is it at all possible?

You can show your collections in ANY store. Go to the collection settings page. Go to 'edit' on your chosen collection and tick all the stores you want that collection to appear in.

Your collections are per creator account, not per store. You can choose on store settings page, whether or not to show any collections in that store. You choose inside of the collection which stores you want to display the collection in. Use the Edit feature inside and check the boxes for the desired stores.

It was hard to find, but it did work, now I need to figure out how to show only the products I want on product pages.

Click Edit on the Collection preview, to make it visible in one, many or all of your stores.
Then use the very last field Selects the Default Store. to change which store the Collection is attached to.
So, just choose your Third Store as the default store to MOVE the collection there. And you can have it visible in just your third store or in all three if you like.
It's interesting to know that the store where the product was Posted for Sale is the store that will be credited with the sale, no matter which collection it's in or which stores that collection is visible in.

Interesting question.
The collection would only show up in the 2nd store.
But when posting it for sale you have to choose a store and a category in that store. This is the store that will show above the product title on the product page.

It's easy enough to check, but it would take a few days to index, maybe? Or maybe not, maybe it's immediate.. I believe that no matter what, the product will show as having been created by that original store, even if the collection is visible only in the new store.
You can do a little test on this and set things up just as you have mentioned. Then look and see which store shows above the product.
