Good morning,
Do you guys do the whole wedding product line or, sometimes, do you design just the invitations and thank you cards and maybe a couple of other products?

I usually like to make a suite of about 5-10 products - invitation, RSVP, a few enclosure cards, thank you, etc. But then if the design doesn't take off, you've wasted all the time making a bunch of matching products that don't sell. So I guess it really depends on how confident you are in the sellability of the design, as well as the target market- do the people looking for that type of design (say, boho floral) tend to buy just the invitation, or a whole matching suite?

There's really no exact answer to this. We usually make collections of at least 50 products, but we have also done much smaller collections of about a dozen products if it's a design that we feel is very niche. If it does well then we'll add more products later. The larger collections don't always take off immediately, but I would say there is benefit in including some of the products you might not consider to be "main" products in a wedding collection, such as place cards, address labels, bridal party proposal cards, etc. They might not be the "big ticket" items but sometimes those will sell before the actual invitations and draw attention to the collection as a whole. None of this is an exact science though. It really does take some experimentation to see what works well for you.
