If I do not join the ambassador program and do not post anything on Pinterest will that make it where I get just my 14.90 sales percent and no one can make money off my products.

Posting to Pinterest is not the only way for your products to be seen. As long as your store and products are set to "public", other creators will be able to see them and those creators could share your products to Pinterest, or to Facebook, or to Benable or to anywhere else. So the answer to if you do not post anything on Pinterest will that make it such that you get just your 14.90 sales percent and no one can make money off your products, would be no.
Surely it's not supposed to rhyme with brewski.

No, there is no way you can opt out of having 3rd party percentages taken out of your sales. All quitting the ambassador program would do would be to make you ineligible to get referrals...

Zazzle asked all designers to shift to 10% royalty by 1 April for printed products. You can, of course, select your own royalty rates of any percentage for any or all printed products, Zazzle deducts a 5% fee from all earnings above 10% every month for any royalties over 10%.
Some people set their default royalty individually on products (say they want to sell canvas art for higher earnings then birthday cards) or you can set your whole store for 10% with the Default royalty setting, though you can change that rate on any product individually to any %.
Downloads are not included in this. They work differently. You can see it in eligible products you post the earnings estimation on downloads. You get the lion's share of $ on a download and Zazzle takes the nominal $ amount in that case.

the download is for the customer to get a copy to either print at home or take to a printing service and you get a one time payment higher then regular royalties to give them that privilege. You might look up "downloads" in forum to learn more.

Yes, it can be hit and miss. I haven't got my free business card code in the email for a couple years and have to pursue Zazzle every year for it now though I do get a annual zazzle anniversary congrats of "a another year being with Zazzle," like clockwork. But, I thought it worth mentioning about making sure the notification in account is turned on--just in case for newer people.
