How to add new categories and delete old ones after deleting items that I have moved

Hello everyone!
I have spent hours looking for info in the forum and in the FAQ but I am stuck.
My store has several categories that I don't want to keep anymore. I have decided to create 7 new categories, move the items I have in the categories where they should belong now, and then delete the old categories.
This is done to fit what Zazzle says, 'It's not the product, it's the intent'.

In detail they say:
How to Set Up a New Category with Custom Icon
Go to your Public Products page, click on "All Categories" in the left-hand navigation, and click on "Add new category" under the "Store Categories" title.'
This is all clear but nowhere in my page I can see nothing called All categories. And the word Categories is not clickable.
Therefore I tried to go around the issue by managing the items one by one, and then changing category and pressing 'add new category' but it worked only occasionally.
I must be missing something! Surely in the shop management page there should be an option that when I select a number of items I can move them to a category? But for some reason some end up in Collections and this is not the same.
I am glad I only have about 40 items to move....But it's so frustrating! I wonder how you guys deal with this issue?

I decided categories are too much trouble, so I have been putting everything in just one category for a long time now, so I have no tips on this question. However, it seems like after Zazzle made certain reorganizations of the site, they neglected to update the instructional page you posted---that would be why you are not finding the appropriate links in the spots indicated.
I would recommend posting that link in the IDEAS and SUGGESTIONS part of this forum and asking that Zazzle publish a rewrite of the page.

In the back end of your store @franz on the left hand side - you'll find the 'All Categories' section just under your store name beneath the departments.
To add a new category - click the Add New Category (blue button) and you can name it here. It does take a while for the site to catch up and index it.
To add a product to your new category, find your product and click 'actions - set store category' just underneath it and chose the category you want to add it too. Again, this is not immediate in the front end as the site has to index it and catch up.
You can do multiple products at once by selecting the products (tick box) going up to the right hand side (bulk actions) and select 'set store category' there.
Patience is key with any changes you do to your categories (and product creation in general)

Thank you Sarah! The first option is not visible to me - as I wrote previously, when I look where you said there isn't a line saying All categories, and the only one that says so takes me to OTHER shops, and out of mine.
I did follow the instructions as per yours, to manage my items category - but it only worked for some items, despite doing the same action over and over again.
Persistence.....patience and mighty prayers....

Are you on mobile or desktop @franz ? The 'All Categories' section should be just under your store name beneath the departments on the left hand side on desktop - click the products tab from your home page to access it and click the All Categories from there

Hi Sarah, I am using an iMac desktop computer. I am uploading a screenshot of what I can see. Collections are visible. Categories are not. Unless I need a new pair of glasses?
