How to add new categories and delete old ones after deleting items that I have moved

Hello everyone!
I have spent hours looking for info in the forum and in the FAQ but I am stuck.
My store has several categories that I don't want to keep anymore. I have decided to create 7 new categories, move the items I have in the categories where they should belong now, and then delete the old categories.
This is done to fit what Zazzle says, 'It's not the product, it's the intent'.

In detail they say:
How to Set Up a New Category with Custom Icon
Go to your Public Products page, click on "All Categories" in the left-hand navigation, and click on "Add new category" under the "Store Categories" title.'
This is all clear but nowhere in my page I can see nothing called All categories. And the word Categories is not clickable.
Therefore I tried to go around the issue by managing the items one by one, and then changing category and pressing 'add new category' but it worked only occasionally.
I must be missing something! Surely in the shop management page there should be an option that when I select a number of items I can move them to a category? But for some reason some end up in Collections and this is not the same.
I am glad I only have about 40 items to move....But it's so frustrating! I wonder how you guys deal with this issue?

Go to your products tab @franz and your should be able to see 'all categories' on the left hand side - if you want your categories to appear on your home page, goto settings tab - advanced settings - add Products from hidden sections to visible (and tick box to show titles) - You have to press the submit blue button to save these settings

I am trying to see what you say but it's not there. Could it be that shops in Zazzle.co.uk are different from .com shops?

@franz This is your profile setting and not your store settings - Click on the Stores Tab - select your store and that's where all the categories are i.e https://www.zazzle.com/store/franzsunshinestudios/products

Hello, I’m going to try to help you. Below is a detailed explanation on where to look and what to do. I had difficulties with the categories myself at the beginning. I hope it helps.
DELETING OLD CATEGORIES
Go to your category-product – visible on the product main page.
PRODUCTS | CATEGORIES
Check if you made categories or sub-categories, clear or move out all your products into the new categories you have created.
You cannot delete a category if you have sub-categories.
It takes one or two days before the products move into your new category.
Once this is done.
Go back to the sub-category or the category or the products.
See EDIT | DELETE | ADD NEW CATEGORY
Press delete.
CREATION NEW CATEGORIES
Go to the product main page.
On the left column you see
Department
Name of your shop
Category (the list of your created categories appears below)
Look under the name of your shop, see
All Products
Featured Products
All Categories
Go to “All Categories”
On the new page you read “STORE CATEGORIES”
Press “Add new category”. A new window open
Fill in:
A name for your category
Add a thumbnail picture, your category will appear in your front page, but you don’t have to.
Tick the box “Hide” if you want time to arrange your products before presenting them to the public.
Don’t forget to untick the box when you are ready.
INDIVIDUAL PRODUCTS in the store have an “action button” under each product.
You can
Edit Details
Make Hidden etc…
Add to Collection (these are NOT CATEGORY PRODUCT)
Set Store Category (that’s the one you want)
A window open and a list of your created categories appears, tick the right name

Thanks for your effort. I'm trying to follow your directions. But my old autistic brain....
I would like to take items out of a category and put them in another. I don't know how to do that. Another thing I don't understand is what this phrase means "Set Store Category"

Hello,
“Set Store Category”
Go to the Product page,
Under each product you have 2 buttons
Left: the action button
Right: the share button
Left click on the action button, unroll the list, you read
“View insights, Edit Details… SET STORE CATEGORY
Left click SET STORE CATEGORY and choose the already made category for example “Flowers”
To change the category select a new category for example “Red Flowers”
Click OK
It takes few days before the change appear.
