I'm happy with all my Collections, as I create product better with themes. However, I realize I need a Category for SEO and down the road, using API. So, I want to create just one.
After I move the products from the collection to new Category, can I keep the collection with the same items?

I'm surprised no one has answered this yet. I long ago abandoned the use of categories so I can't let you know what has worked for me, but I wonder if you have tried testing this out with a small number of products?
I also do Postcrossing!

I'm curious to know if you have any insights by now. Did adding your collected items to a category boost your numbers in any way? Any evidence for or against? We've been favoring collections over categories thus far. But we're just getting started. So we have too few views to draw any conclusions.

I did not complete a Category and go in that direction after jumping in and starting the process. I went with a strong intuition to keep my store with all Collections, for now. Good questions. I wish I could be of more help to you.

Collections and Categories are two separate animals, both being just ways of virtually organizing your stuff. An item can be in both. So yes you can have one Category for "All of Molly's Stuff" and also Collections to group items however you see fit.
* Note that a product can be added to multiple Collections but can only be assigned one Category.
